Serves 4 – 40 minutes
- 1 brcocoli
- 1 red onion
- 1 garlic clove
- 1 piece of fresh ginger (1 cm)
- 100 g soba noodle
- 16 King Prawns
- 2 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (nuoc mam)
- 1 tablespoon mirin
- 1 tablespoon balsamic vinegar
Start by cooking the soba noodles according to the pacakging indications. Leave on the side, soaking in cold water (otherwise they will become sticky).
Blanch the broccoli, it must remain chunky. Drain, add salt & pepper.
Fry the king prawns in a pan with a dash of oil. When they are done, shell them.
Fry in a pan or a wok the diced onions, ginger and garlic. Add noodles and all the seasoning ingredients. Blend well.
Serve the each part in three different bowls, with a bit of say sauce on the side.
