Green & Red “Sunshine Pizza”… For both Vegetarians AND Meatlovers!

Recently I came accross several recipes for a “sun-shaped pizza” on the blogosphere. I decided to try it, but I had the idea to make it with two different fillings, one red and one green, for vegetarians and meat lovers 🙂

Pizza dough

For this, please refer to my never failing pizza dough recipe – click. To make sure that your “sun” keeps a nice shape while baking, try using a low gluten flour, such as wholemeal flour, or a mix of 50/50 classic flour + maze flour / classic + buckwheat, etc.

Filling

“Texas Sun” Filling… For meatlovers

  • 1 onion
  • 1 garlic clove
  • 100 g mushrooms
  • 200 g minced meat
  • 1 tablespoon tomato concentrate
  • 10 cl water
  • 1 pinch strong chilli
  • Olive oil
  • Salt & Pepper

Fry the minced onion in a pan with olive oil. Add garlic, meat and mushrooms, cook for another 3 minutes. Add water, tomato concentrate and chilli. Simmer for 20 minutes, season to taste and keep on the side.

“Greece Sunshine” filling”… For vegetarians

  • 1 onion
  • 1 garlic clove
  • 200 g spinach (fresh, frozen or canned)
  • Around 100 g fêta cheese marinated in olive oil
  • 1 tablespoon pine nuts
  • 1/2 teaspoon ground cumin
  • Olive oil
  • Salt & Pepper

Fry the minced onion in a pan with olive oil. Add garlic, spinach (drained if canned spinach) and cumin. Simmer for around 10 minutes. Add fêta cheese, pine nuts and season to taste and keep on the side.

Finalizing and Baking

Preheat the oven at the highest temperature (270°C for mine). Roll thinly two pieces of pizza dough, one slightly larger than the other one (the one that will go on top). Fill you pizza, as shown on the photos above. Cover with the largest pieces of pizza dough, seal with a bit of cold water on the sides then cut the “rays” of your sunshine pizza as shown on the photos. Using a paint brush, goledn the top of your pizza with some eggyolk. Bake in the oven for about 20 minutes, including 10 minutes at the bottom of the oven to make sure the above part is well cooked too.

Wine Match

This pizza is absolutely perfect to share with friends. As it is made of two different fillings, it can actually work with white, rosé and red wine! You should look for a fruit driven wine, not too complicated, sunny and generous such as a Côtes du Rhône or a Lirac, as shown on my photo.
