Mini churros with pink pralines (sugared almonds)

Churros are delicious but they are greasy and get your fingesr dirty…. This is why I imagined a “girly” version of them, still as greasy, I have to say, but in a mini version, and pink! With Disney’s Frozen music in the background, this is a future star of any girls’ birthday afternoon, for sure! 🙂

Ingredients

  • 1 handfull of ground pink pralines
  • 1 egg
  • 12,5 cl water
  • 60 g unsalted butter at room temperature
  • 110 g white flour
  • 1 pinch of salt
  • 2 pinches of sugar

Recipe


I used my thermomix to make this recipe, but a classic blender or just your arm and a good whisk will be far enough, as this is so easy to make!
Mix salt, sugar and water in a saucepan. Add butter and bring to the boil (4 minutes at 100°C speed 2 using your thermomix). When all is boiling, add flour all in one go, very quickly. Take the saucepan off the heat and whisk quickly (speed 3 during 40 seconds with your thermomix).
Add the egg and keep whisking very quickly (speed 4 during 30 seconds using your thermomix). The mixture must not stock to the sides of the saucepan. Leave to cool in the fridge for one hour.

Cuisson


Heat the oil in your frier at 180°C. Put your churros mix in a churros maker (I started using my pastry bag but the dough is too hard for it, the bag broke, so I do not recommend it). Cook small pieces of dough (4-5 cm long) in the oil, for about 2 minutes (until they get golden). Quickly roll them in the pink pralines dust and serve.
