My grandmother’s Apple fritters🍎👵

This is an old recipe fro the cooking classic book “Larousse de la cuisine”. I have seen my grandmummy and mummymake it again and again, until I learnt to do it myself. Nothing to do with a classic donut.This recipe is made of some crunchy apple slices surrounded by a thing fritter dough.

Serves 6 – 1 hour

Ingredients

Apples

  • 4 apples
  • 1 tablespoon honey
  • 4 tablespoons Armagnac

Peel and core the apples, then cut into 5mm slices. Blend with brandy annd honey and leave on the side for 2 hours.

Fritter batter

  • 175g flour
  • 1 pinch of salt
  • 2 tablespoons butter
  • 1 dl beer
  • 1 dl water
  • 1 tablespoon Armagnac
  • 1 tablespoons honey
  • 1 eggwhite

Melt the butter in a “bain marie”.
Place the sifted flour in a bowl, make a hole in the center and place all the other ingredients, except the eggwhite. Mix well and leave on the side for 2 hours.
Beat the eggwhites and add them gently to the previous batter.

Frying and serving

Turn your fryer on.
Briefly place each slice of apple in the batter, then fry for 3 to 4 minutes until golden.
Serve with some icing sugar.
