Osso Bucco style Turkey Breast with Green Olives & Lemon Zest

Serves 3 – 1h30

Ingredients

  • 1 Turkey Breast
  • 20g flour
  • 2 onions
  • 3 garlic cloves
  • 2 carrots
  • 400 g chopped tomatoes
  • 200 ml beef stock
  • 200 ml white wine
  • 1 pinch of caster sugar
  • 1 teaspoon harissa paste
  • Zest of one lemon
  • 150 g stoned green olives
  • 1 bouquet garni
  • Salt & Pepper

Recipe


Place your turkey breast in a large saucepan with a dash of olive oil. Bake until your breast gets gold on all sides. Add flour, blend well.
Peel your carrots, cut into thin slices. Chop the onions and garlic. Add all the vegetable in the saucepan. Cook for 5 minutes. Then add all the other ingredients. Simmer for one hour.
Serve with small potatoes or rice.
